What do you do when you're faced with a fridge full of leftover tri-tip?

A fridge full of leftover tri-tip is the perfect example of having too much of a good thing.

We had a huge spread at our Easter brunch this past weekend, but because everyone did such a great job bringing their favorite dishes, and because my boyfriend bought what looked like a whole cow, we’ve got a huge stash of delicious slices bagged up in the fridge.

Not wanting to eat the same exact thing every night this week, I’m looking for suggestions — what do I do with tri-tip leftovers?! Salad, sandwiches, tacos? Any and all ideas are appreciated.

Fajitas are pretty simple. Philly Cheese steaks. Caesar salad. Make a batch of Chili. Do a Hash.

Wraps with a bunch of other yummy stuff...then freeze the rest!
